Chilled Dilly Beans with Toasted Almonds and Feta

A dill dressing is the perfect complement to string beans! Try a variety of colors for an extra-special presentation.

Serves 4

14oz string beans (mixed colors make for a great visual)

1 small cucumber, peeled, seeded and cut on the bias in 1/4” slices

For the Vinaigrette

1 cup fresh dill, coarsely chopped

1/4 cup EVOO

2 tbs white wine vinegar

2 tsp dijon

1 tsp salt

1/4 cup slivered almonds, toasted (for garnish)

1/4 cup feta cheese, crumbled (for garnish)

  1. Cook beans in salted boiling water for 4-5 minutes. Strain and add to an ice bath to stop the cooking and preserve the color. Add vinaigrette and toss to evenly distribute dressing. Arrange on a platter and top with sprinkled cheese and almonds
